The olive harvest takes place every year during November/December. The olives are harvested and sorted by my family by hand. Afterwards we take them on my dad’s trailer to the oil mill La Estación in Puerto Lumbreras where the oil is extracted from the fruit.
At the olive mill our olives are processed on their own to ensure the oil is single origin and of the highest quality. We cold press the olives over several hours exclusively by mechanical means.
